Turkish Eggs Recipe

I’m a huge fan of Turkish eggs, it’s a savory yogurt dish, very high in protein and can be eaten by its self but I love to eat with toast.

Ingredients

1 cup Greek Yogurt

2 eggs

2 slices toast of choice

Chili crunch for garnish

Salt and pepper

Picked onion and green onion for toppings

Start out by putting 1 cup of Greek yogurt into a bowl and spread it around. For poached eggs, boil water and when it starts to simmer at a little vinegar and “swirl” the water in a circle motion, drop your eggs in, this combination makes poaching eggs really easy! Start the timer at 4 minutes once your eggs are in and take them out and pat dry when the timer ends. In the meantime toast your bread.

Now it’s time to assemble, add salt, pepper to taste to your yogurt and for added flavor I love to add Momofuku chili crunch and swirl it a bit in the yogurt, add your 2 poached eggs, a bit more chili oil on them, and then top with picked red onion and green onion. It’s super quick and the only cooking you need to do it poach eggs, you can always fry them too if poaching seems intimidating!
